Parmesan Baked Fish with Onion and Leek

My son-in-law made this for dinner one evening while I was visiting. It was something that he came up on his way home from work. It was baked fish fillets with onion, leek and cheese stuffing, and polenta on the side. You can use any variety of firm white fish: cod, catfish, or grouper works well. If you are looking for a simple yet elegant fish dinner--this is the one!
Ingredients: (serves 2)
4 white cod fillets
2 medium leeks, sliced (only white stems, discard most of the green leaves)
1 medium sized white onion, sliced
½ cup Parmesan cheese
⅔ cup dry bread crumbs
1 Tbsp. chopped parsley
salt and pepper to taste
2 Tbsp. olive oil

Method:
1. Preheat oven to 400°F.
2. In a frying pan, heat a tablespoon of oil over medium heat. Add onions and leeks and sauté for about 8 minutes until softened. Remove from heat and allow vegetables to cool. In a bowl, add parsley, half of the cheese and bread crumbs, Stir well to mix.
3. Brush remaining oil onto the baking dish. Seasoned both sides of the fillets with salt and pepper. Overlap the fish in a cross and place enough leek and cheese mixture in the middle. Fold over the ends of the fish so the corner of the fish overlap into a square package. (Note: The other option is to roll individual slices of fish with the filling and tuck the ends at the bottom. Doing so, you'll have four portions of serving)
4. Using a spatula, gently place the fish into the baking dish. Spread any stuffing leftovers around the fish. Sprinkle evenly cheese and breadcrumbs on top. Bake in preheated oven for about 20 minutes until fish flakes easily. Serve immediately.
